Subway franchise to open on the Parks Highway
The closed down Sunshine Restaurant at the intersection of Talkeetna Spur Road and the Parks Highway will soon come back to life again as a Subway sandwich franchise.
The closed down Sunshine Restaurant at the intersection of Talkeetna Spur Road and the Parks Highway will soon come back to life again as a Subway sandwich franchise.
Shawn Peterson and his partner Paul Foglia, both of Healy, leased the building and bought a Subway franchise license. They already operate the Subway store at the entrance of Denali National Park.
Peterson said they are remodeling the old Sunshine restaurant log building, located next to the Tesoro gas station at the Parks Highway. They need to re-wire and completely re-do the plumbing, but have to wait for the state fire marshal to finish the review of the building. Once the partners have the fire marshal’s green light, they proceed with remodeling.
Peterson said he’s aiming for a late August opening of the new Subway store. Based on numbers of employees at their Denali location, he expects to hire approximately 15 employees. Peterson intends to keep the Subway open year round.
